In the kitchen with Mitchell

  • 225g Chickpea Flour available from Fiji Market in Newtown
  • 1 teaspoon sea salt (I use Korean)
  • 1/2 teaspoon bicarbonate of soda
  • 400ml water
  • Peanut Oil for cooking

Sift the chickpea flour, sea salt and bicarbonate of soda into a large bowl. make a well in the centre and add the water, using a balloon whisk, gradually mix the flour into the water to form a smooth batter.

Set aside for 15 minutes.

Heat enough Peanut Oil to cover the bottom of a frying pan over a medium heat.

Add a small quantity of the batter to the pan and cook for 3 minutes each side – until golden.

Repeat with the remaining batter.
