A number of MAG members have asked Harry for the recipe for the very popular “Vegetable Bake” which he often brings to our suppers. It is a tasty, simple, wholesome dish, which is easy to make. The vegetables used in the dish can be varied depending on the season and your personal preference. It is useful as a side dish for Bar-B-Cues and with hot or cold meat dishes for lunch or dinner and can be reheated as “left-overs” with toast for breakfast!

The recipe is:

  1. Lightly mix one 420gm can of corn kernels, one 420gm can of baked beans in tomato sauce and one 420gm can of creamy pumpkin soup.
  2. Slice 3 large potatoes, 2 large carrots and one large sweet potato and part cook them in a microwave or steam them.
  3. Put the vegetables into a baking dish, cover with the mixture and bake at 180°C for 40 minutes.
