In the kitchen with Mitchell

Hi, here is my second recipe for you all to try.

HUMMUS – BITAHINA
“Uncle Richard’s Favourite”
[that is Richard Buckdale]

  • 2 x 400 gm canned Chic Peas – drained thoroughly and rinsed [I use Italian Chic Peas]
  • the juice of 2 Lemons
  • 2 gloves of Garlic – sliced
  • 4 tablespoons of Olive Oil
  • Pinch of cayenne
  • 2/3 cup of Tahini
  • Sea salt and freshly ground Black Pepper – to taste.

Place the Chic Peas into food processor and make into a smooth puree. add the Lemon Juice, Olive Oil and Cayenne and Tahini to the food processor and blend until creamy.

Don’t forget to scrape the sides of the bowl of the food processor.

Season with Sea Salt and Black Pepper.

Place in a serving dish and chill

Then serve.
